Perfect for lunch or as a dinner appetizer. This is a really light and summery dish. It's also really easy, with a prep time of 15 minutes.
- Good Quality Mozzarella, cubed
- Grape Tomatoes, halved
- Fresh Basil
- Dry Sausage (Chorizo, for example), sliced
The quantities depend on how many skewers you wish to make. One package of each ingredient should make enough for 6-8 people as an appetizer, or a few days worth of lunches.
- Start the Balsamic Reduction.
- Cut the grape tomatoes in half and slide up the skewer. Use a small basil leaf, or a large one cut in half and add to the skewer. Then add a cube of mozzarella and finish with a slice of dry sausage.
